My Beef Stroganoff Recipe

This recipe I've been working on for the past year or so (I've tried everything) Yesterday I was finally satisfied with the result.

Ingredients:


455g beef (any tender cut) (16 oz)
2.5 tbsp butter
3 onions
450g thin sliced mushrooms
white vinegar (about 3/4 cup depends on your taste)
250 ml sour cream (10 oz)
250 ml 10% milk (10oz)
cheese (I prefer cheddar)
2 cups beef broth
salt
pepper


Directions


1- Wash meat and dry it with kitchen towel, cut into strips 1/2 inch thick, season with salt and pepper to taste
2- Cook the strips in a skillet with 1.5 tbsp butter until brown, then turn down the oven to medium heat, add 1/2 cup water and a splash of white vinegar. Cover until soft (about 30 to 40min). Keep adding 1/2 cup water every time it evaporates. Stir occasionally.
3- In a separate pan put one tbsp of butter and sautee the onions until it becomes translucent and soft. Add the mushrooms and keep stirring.
4- Once both pans are cooked and soft add everything into a bigger pan or pot,add 2 cups beef broth, 250ml sour cream 250ml of 10% milk and about 1/2 cup white vinegar. Mix and cook for 10 to 20min, add cheese on top until the cheese melts. (Taste it and add salt and pepper to taste)
5- Et voila!


Healthy alternatives

Now I've been working on this recipe based on taste only, not healthy options. For healthier alternatives you can try using olive oil rather than butter, low fat milk rather than 10%, low fat cheese and yogurt rather than sour cream.
